If the temperature rises above that the wine will ferment too fast and this will make the wine taste poorly. It
can also cause the growth of bacteria in your wine. If the temperature is below that it will ferment too slowly and
possibly not at all. You should be certain to have a thermometer in the room where you will be fermenting
your wine.
Finally, when making your wine make sure that it is not exposed to too much air. It will cause it to oxidize.
This will turn your lovely white wine amber colored and that red wind will turn orange. It will also give the wine
an odd, almost caramel like flavor.
